I am not a big fan of over complicated cooking and much prefer fuss free food. As I am still busy getting my home office organised and prepping for our holiday, I want to keep this week clear.
I am still following Slimming World and hit my first half stone award this week. I was ridiculously pleased about this!
So, keeping it low fat and uncomplicated, here is this week’s easy meal plan.
Fuss free food for a busy week
We are at a wedding, which is incidentally serving some homely, fuss free food! Mr S has opted for beef wellington, whist I am having a vegetable pie. Hopefully, I won’t eat too many syns!
Eating out again! This is not going to be good for my waistline, but it is my daughter’s birthday so what can we do?
We are going back to our favourite Gurkha pub. Lovely food at great prices. The staff are fantastically helpful and polite too.
Jacket potatoes, tuna (with a tiny bit of mayo and fat free natural yogurt), a sprinkling of lower fat cheddar and a very large salad. Back on track!
Chick pea curry (made using Frylight rather than oil) and rice. Such an easy recipe and a favourite of mine.
Mediterranean fish stew with mashed potatoes. I love this!
With one thing and another, I never got round to using the Simply Cook spices to make spicy Iranian stew. It does look nice! I have bought a butternut squash for this so need to do it.
Same! There should be enough stew for leftovers so a night off cooking for me.
Hopefully my fuss free food plan will give me time to do all the other things I want to do. There is quite a bit to do on the veggie patch, the office to finish and lots of eBay stock to organise.
