I am just about to start my 3rd week of Slimming World. The first week I lost 3lb. Last week I missed the meeting, so I will definitely get along this time to find out what I have lost. I had a few days when I went off plan, due to celebrations connection with leaving my full time job! However, I am back on track now and can really feel the difference in how my clothes are fitting me. I am inspired to plan another week of Slimming World dinners!
Here is what we will be eating this week.
Sunday
Seafood paella. Everything is free in my version. I shall sauté my veg in Frylight – onions, peppers and garlic in this case – then add the rice, fish stock and seasonings. I will add some white fish at that point and the prawns and mixed seafood at the end. This will be nice with a big green salad I think.
Monday
Mushroom stroganoff made with fat free yogurt. I will publish the recipe for this next week. This is a good one to include in my week of Slimming World dinners as I love mushrooms and could eat them at every meal.
Tuesday
Oven baked spaghetti. I am going to do this very simple recipe from my second hand ancient Complete Vegetarian Cookbook, bought from a boot sale by my dear mum. I will use low fat cheddar as my healthy extra B choice.
Wednesday
Salmon with new potatoes and vegetables. I will make a quick tomato sauce for this with tinned tomatoes, garlic, peppers and olives.
Thursday
Vegetable frittata and salad. There are loads of Slimming World friendly recipes for this on the internet. I think I will try this one.
Friday
Linda McCartney sausages (0.5 syns each) with mashed potato and lots of vegetables. I don’t use butter in the mash, just a little milk, and will use a syn or two on some gravy.
Saturday
White fish with home made, butter free parsley sauce, using milk from my healthy A choice allowance, served with new potatoes again and whatever veg needs using up.
I am allowing myself some treats still. As I am a snacker, I eat fruit and vegetable sticks all day. In the evenings I can have the odd gin and slimline tonic, a sugar free bitter lemon (I have just rediscovered how much I love this!), a bag of French Fries or a couple of Dairylea on Ryvitas. I have also discovered Muller Light chocolate fix desserts, which I found in Tesco for £1.40 for four pots. They are yummy, especially the mint one, and only 3.5 syns per pot.
I haven’t been perfect and have gone over on my syns several times. However, on other days I have gone well under, so hopefully it will work itself out.
I am impressed with how normal, healthy and unfussy the food can be and hope you can see that in this week of Slimming World dinners. It is also super easy to eat on a budget. I found a great website for ideas and advice, Slimming World Survival. Check it out!

Try adding beaten egg into your mash, it makes it nice and creamy and adds extra protein.

It is amazing how many meals are slimming world friendly. The Seafood paella sounds so good. x

I love those chocolate fix pots too much! I can’t buy them as I can’t resist them.
If you like your mash a bit creamier, add a tablespoon of Total 0% Greek yogurt. I use this for some many things as its a great cream substitute (and free on SW). Also, the Pinch of Nom website has some great SW friendly recipes.
