
I have been a bit lax in publishing my weekly meal plan lately. There’s always one on my head – I just sometimes get involved in other stuff and don’t get round to writing it up for the blog.
This week I have been doing a lot of sorting and organising. I dug out a big box of old cameras that my daughters no longer use. I have been testing them out and will list them on eBay.
More decluttering! The boxes of files under our bed are being gone through paper by paper, shredding as we go. This is quite time consuming as some of it needs to be kept so we need to read everything.
There is also the garden to tidy up. We have done a bit, but there is a lot more to do.
I am in the spring cleaning zone, so am keeping our meal plan simple and easy. I am also sticking to a £40 per week budget for the supermarket, so meals need to be both healthy and cheap.
Here’s the plan.
Sunday
Chicken pieces baked with herbs and spices, served with a grated carrot and rocket salad and air fried potato wedges.
Monday
Cheese and vegetable frittata with more of the grated carrot and rocket salad.
Tuesday

Lentil and mushroom pie. I have a memory of making this years ago when I was fully vegetarian so might publish this recipe once it’s clear in my head. We will have cabbage with this.
Wednesday
Smoked mackerel with baked sweet potatoes and broccoli.
Thursday

Chicken and vegetable stir fry, using the rest of the broccoli and cabbage, some carrots, celery, mushrooms and frozen veg.
We have some noodles that have been hanging about, so need to use those up.
Friday
Leftovers from the week. Hopefully there will be some stir fry!
Saturday
Tuna pasta with penne, peas and sweet corn from the freezer.
I am still avoiding carbs much of the time, but eating some a few times a week. Sugar is the main thing to watch, so I am avoiding it and have given up wine for now. There’s no doubt I feel better without alcohol!
Lunches tend to be based around soups, eggs, cheese and salad. Breakfast is often frozen berries and Greek yogurt, occasionally porridge.
I am really watching our grocery costs closely at the moment. Our spending generally, in fact, as our lodger is moving out on a couple of weeks and we may be a few months without that extra income.
Anyway, that is my quick meal plan for this week. What are your ideas for low cost, healthy meals?

I love that feeling of starting again when Spring comes, it makes us all wake up and start tidying doesn’t it?
I’m really watching my budget as I’ve moved to an area where everything is much more expensive, and no Aldi either! But I do have a Dollar Store nearby which has many food bargains (as well as all the all too tempting snacks aisles!). I’m slowly building up my store cupboard and freezer, and really thinking about what I can make with whatever is on special offer. This means I don’t really make a meal plan in advance, just the general idea that I’ll have at least one vegetarian supper, one from the freezer, and at least one from the store cupboard when I’m feeling like giving myself a break. It’s still peculiar cooking for only one and not having to take another person’s food preferences into account, but it’s exciting at the same time.
Moving has meant that I’ve been very busy getting organised in my new home, and finishing the shredding that I didn’t get around to before I moved! You’re right, it does take a lot of time but the end result will be worth it if I can get down to keeping the bare minimum in my ‘office” (aka dining room chest of drawers).

Hi Linda, sounds like you are still having to make lots of adjustments but great that you are being so positive. No Aldi though??!! If your dollar stores are anything like our pound shops, they are now full of things that actually cost up to 5 dollars… still cheap I guess. I find ours great for pet treats
