In this week’s food plan the focus is on healthy, low fat budget meals.
Slimming World fell by the wayside last week. Half the week was spent camping at the Green Gathering Festival and the other half in a tiny but pretty AirBNB* in Pembrokeshire near Tenby. As a result, cooking facilities were limited and we ate what was easy and to hand. Not to mention the odd pasty, plenty of wine and some Welsh cakes.
My scales think I have put on about 3lb. In a week! It is far too easy to pile it on these days. Middle aged spread is a real thing it seems.
It’s time to get back on the Slimming World wagon. I am pretty close to my target weight now (or was before we went on holiday), I just need a final push. We also want budget friendly food so that we can start saving for our next holiday…
As you would expect, we came home to lots of home grown vegetables, so they need eating as well. We won’t need to buy any vegetables this week anyway. Here is my meal plan for low fat budget meals that can incorporate produce from the garden too.
Low fat budget meals
Saturday

Slow cooker chicken curry. I will adapt this one my using Frylight instead of the oil and butter. Chard, like spinach, is also good in curry. We have plenty in the garden, so I will chop some up and thrown it in near the end. We will eat it with basmati rice as we have a large bag of it.
I love my slow cooker but don’t use it enough in the summer. The one I have is a 3 litre one, which is fine if I am only cooking for me and Mr S. However, if I was buying one again I would go for a bigger one that is at least 5 litres, maybe something like this one.
Sunday
I have no control over this as we are eating with family. Our nephew’s partner is making Filipino food. Exciting!
I shall take a large fruit salad and fat free Greek yogurt as my contribution. Then I can at least have Syn free dessert.
Monday
This will be a catch up day of writing and eBay listing. Dinner will be something easy, like this Slimming World crustless quiche recipe with air fried ‘saute’ potatoes and whatever veg needs eating. I also have my SW weigh in…. ooh nooo!
Tuesday
Vegetable and prawn paella. I will make this up as I go. We have runner beans from the garden, peppers in the freezer (I froze them before we went away so that they didn’t go to waste) along with prawns, celery, herbs and a few tomatoes ripening too.
Wednesday
Smoky chicken with chick peas with mashed potatoes, which I add a beaten egg to for a bit of creamy richness. Probably runner beans and chard alongside this.
Thursday
Home made ratatouille using courgettes from the garden with pasta and some cheese from my allowance.
Friday
Just me for tea, so I will probably have a large jacket potato with some more of the ratatouille.
Other meals
Lunches will mainly consist of home made soup using veg from the garden. Also jacket potatoes or eggs in some form or another are favourite.
I am very unadventurous when it comes to breakfast. Porridge is my favourite! However, I thought I would have a go at overnight oats at some point. We have plenty of fresh blackberries and frozen home grown red currants that might work.
Desserts and snacks will be fruit, fat free Greek yogurt, and perhaps a low fat chocolate mousse or three. You got to spend your Syns on something!
