‘What’s for dinner?’ This is Mr S’s favourite question? I usually hope he won’t roll his eyes at whatever I have planned. If he did the cooking we would eat a lot of egg on toast!

Anyway, I am joining in with Katy Kicker’s meal planning link-up as usual and publishing my meal plan. I don’t always stick slavishly to it. Sometimes life gets in the way, or I am busy or tired. Occasionally I swap days around so as not to waste any ingredients, or turn them into something altogether different.
However, I do find it helpful to have a meal plan as it saves me both time and money. It also gives me an immediate answer to the ‘what’s for dinner’ question!
I don’t have to buy very much from the supermarket as I did quite a large shop in Aldi last week. I am using up a lot of what we have in already, as I don’t like to waste food.
What’s for dinner this week
Saturday
I’m out at a yoga event all day, so don’t want to start cooking when I get home. So yesterday I made a large pot of thick minestrone soup, which I had for lunch. There is loads left so that’s dinner sorted, and it’s Slimming World friendly too.

Mr S is still away, but daughter no 3 is making a flying visit for her friend’s birthday. I expect she will eat some of this at some point as well.
Sunday
We are off to my mum’s for Sunday lunch! I might text her in a minute to ask what’s for dinner….
It will be nice not to have to cook and hopefully there will be some minestrone for tea when we get back, so a no cooking day for me. I like to have a couple of those a week.
Monday

I found a Thai green curry kit that I had completely forgotten ever buying in the back of the cupboard. It’s actually quite tidy and organised but it had been pushed behind some tins.
There are chicken breasts in the freezer, so that’s a nice easy dinner for Monday night.
Tuesday
I am actually out again for dinner – twice in one week! So hopefully I will be eating something yummy with friends in the noodle bar in town. Going out on a school night!
Wednesday

Tonight we will be eating some of the Bolognese that I made as part of my batch cooking efforts last week with spaghetti and salad. Mr S will finally be in for dinner – hurrah! I might treat him to some garlic bread if he is very lucky.
Thursday

Tonight we will eat the rest of the salad up with a large Spanish omelette and air fried chips. I love my air fryer, even if I am rather unadventurous in it. You can make healthy, low fat chips in about 8 minutes. I might use sweet potatoes actually, as we have some that need eating in the fridge.
Friday
Macaroni cheese. I haven’t eaten this for ages, mainly because I was doing Slimming World and it’s hard to make a creamy, stodgy mac cheese fit into a low fat eating plan. But I love it, so will treat myself.

I think I’ll be making and eating a lot of veggie soups and stews now that the weather has turned cold and wet. I also want to make some bread following an interesting recipe for whole meal bread that’s on the side of some organic flour I bought. I also want to make a Christmas cake, a rich dark fruit cake is my absolute favourite.

This week’s meals sound delicious! We’ve made soup for lunch this week but I think I need to try and make some more hearty soups for the colder weather coming in,.

I write the meal plan on the white board in the kitchen so my girls don’t even have to ask me what’s for dinner now. hehehe
That minestrone soup looks so good and the Thai green curry kit looks like a great idea.

Saturday I stayed home and cleaned my apt. and did laundry so had a couple of bowls of the vegetable soup I made on Thursday.
Sunday made myself some bacon and eggs for supper – I’d been out all day and very busy so wanted something quick and easy.
Today is Canadian Thanksgiving and I was invited to eat with friends so that was lovely – too full to eat anything but a cup of tea this evening!
Between work, my volunteer shift and a committee meeting Tuesday and Wednesday will be very long days. I’ve prepped two large salads full of fruit & veg and I cooked a duck breast yesterday and will have some in my salads each day. I’ll be eating this around 5pm so when I get home at about 9pm I’ll probably have a small bowl of the roasted tomato soup I made on Saturday.
Thursday will probably be another large salad as I need to use up the salad greens but I think I’ll cook a bit of salmon for my protein – only takes a few minutes.
I’ve got some beef strips that I’ll take out of the freezer on Thursday and marinate and then do them as a quick stir fry with lots of veggies on Friday night and that’s the week sorted.
I don’t mind eating the same thing a few nights in a row (and my salads are always a bit different each time) – just need to keep on the straight & narrow. I’ve lost 35 pounds in the past 5 months so try to be strict (low carb) at least 6 days out of 7. I have a fancy TEA out with friends this coming Saturday so a lot of salads during the week will be just fine.
