A summer meal plan that is Slimming World friendly

The weather has been fabulous this week. I love the sunshine! This, along with being on Slimming World, has made me want to eat lighter meals. I am also really busy setting up my own online business, so I can’t be bothered with faffy recipes. They need to be easy to cook and eat. So, although we aren’t quite there yet, here is my summer meal plan for the coming week.

A summer meal plan (Slimming World friendly)

Saturday

Syn-free summer veg spaghetti (from A Pinch of Nom). This uses rainbow chard but I will use spinach instead. It also contains asparagus, which I love!

Sunday

Salmon with air fryer roasted potatoes (sprayed with Frylight) and lots of steamed veg.

Monday

My daughter gave me a recipe card and spice pots from Simply Cook for an Iranian Vegetable Stew. I think the spices will all be free on Slimming World. It states that it makes 250 calories per serving, which sounds fine. I will let you know how I get on!

Tuesday

Vegetable stir fry and noodles. I will use a similar flavouring to this recipe.

Wednesday

Ratatouille made with Frylight, rice and some lower fat cheddar from by healthy A allowance. I picked up a small aubergine in Lidl along with courgettes so will add that.

Thursday

Hard boiled egg and tuna salad. I mix a small spoonful of real mayo with fat free yogurt, salt and pepper, and lemon juice as a dressing for the tuna. The very low calorie stuff is awful and this tastes nicer.

Friday

Mushroom omelette with air fried chips and peas. A nice, easy end of week dinner!

Taking supplements

I seem to have got into the habit of taking loads of vitamins on top of healthy eating. This isn’t really necessary and is expensive.  However, I have found that a combi tablet of glucosamine and chondroitin has made a noticeable difference to the aches and pains caused by my disc issues (regular readers will know that I had an agonising trapped nerve for months as a result of this). I also take turmeric as it is anti-inflammatory and acidophilus lactobacillus as I find it helps by IBS symptoms.

That may still sound like a lot of supplements, but I was taking more! I buy them from Healthspan as I think they are good quality and a reasonable price. If you use my referral code you can get £5 off your first order.

    It’s a say to fall for the hype about various vitamins and minerals and I’m often tempted to try something. The thing is, I don’t know whether one thing is OK to take with another so resist them. I have taken glucosamine for about 5 years and really noticed the difference when I stopped for a few weeks. I soon started again! I also take magnesium to help with leg cramps and, in the winter, I take vitamin D.

    We’re on the “Summer Holiday Meal Plan” now!
    Students are home from uni – we’re back to beige crispy stuff again until they go back!

    Methinks I shall be living on sandwiches – which is fine as I LOVE the red pepper & chilli hummus sandwich I make for lunch every day – loaded with sliced tomatoes, cucumber & radishes, topped with rocket and some basil leaves picked from the garden and a splash of Branston Pickle, on a couple of slices of super-seeded bread! Nom nom!
    I will quite happily eat it for dinner too!

    I’ve tried Simply Cook and although some of the recipes were nice, we didn’t enjoy others. I kept the recipe cards of the ones we like and make the spices up myself, it works out cheaper. Interesting about the supplements.

    Your week of meals sound delicious – Slimming World meals are probably the tastiest meals I’ve ever eaten and you would never think you were on a weight loss journey with them.
