Another week has whizzed by and we had a frugal spending week. I had budgeted £60 per week for groceries, toiletries and cleaning products, as mentioned in my November goals post, but have actually only spent £40 each week so far. However, I’m not only trying to keep my spending in trim; I need a meal plan to suit my Slimming World target member status!

It can feel hard to get to your ideal weight on Slimming World or any other plan. However, I find keeping to my target weight a bigger challenge. As I mentioned in my last post, Staying on Track as a Slimming World Target Member, I have found that having Slimming World days helps me. If I follow the plan at least 50% of the time and don’t go too crazy stuffing crisps and chocolate the rest of the time, it seems to work quite well.

You don’t want to feel constantly deprived and worrying about how many syns you are eating, but neither do you want to pile the pounds back on.  I think it’s all about balance.

So this week’s meal plan has one eye on staying in trim and keeping within 3lbs of my Slimming World target.

It also uses up some of the food we already have in the house so that it doesn’t get wasted. That’s the real point of meal planning. It saves so much money and also brain power. You know exactly what you intend to cook on any given day to fit into what is happening.

Saturday

I will be out all morning helping my parents at a table top sale. I’m going to keep dinner quick and simple and make a meal of store cupboard ingredients that is also Slimming World friendly.

We will have tuna penne and black olives with a large salad, a cheap and easy favourite at Shoestring Cottage. I will hold the cheese on top and use Frylight instead of olive oil.

This will be a Slimming World day, so I will take some fruit to snack on at the table top.

Sunday

Pork chops, roasted sweet potatoes, broccoli and carrots. This will be the last of the mega packs of pork chops I found reduced a few weeks ago.

I always cut the fat off them, although Mr S would happily eat it if I let him!

Pudding will be stewed apples with custard, as we still have half a bag of windfalls given by a neighbour.

This won’t strictly be a Slimming World day though.

Monday

I bought a couple of tins of jackfruit out of curiosity recently, but they have just sat in the cupboard since. As I have most of the ingredients necessary, I thought I would try this recipe for a jackfruit curry. It is vegan, so if it’s nice it will be a handy one to make if my daughter’s boyfriend comes over.

We will have this with some brown rice. I will use half fat coconut milk with this to keep the fat content down a bit.

I have never heard of asafoetida, one of the ingredients! According to the BBC Good Food site, “it is considered the most blessed of flavourings amongst Jain and Brahmin Indians, who eat neither garlic nor onions, for it adds a very similar savouriness”. As I generally avoid eating onions because they give me an upset stomach, this sounds quite interesting to me! I have just bought some on Amazon* – I will let you know if it’s any good.

Today will be a pretty good Slimming World day – I am assuming jackfruit will be treated the same as something like quorn or any other veggie protein. I can’t find much about it online.

Tuesday

Baked fish with a tomato and pepper sauce, mashed potatoes, peas and carrots. Rather than mashing butter into the potatoes, I used a beaten egg – a Slimming World trick that adds creaminess without the fat!

Another Slimming World day.

Wednesday and Thursday

Chicken pieces with Chinese marinade, stir fry vegetables and rice noodles.

I will make enough of this to eat on Thursday as well. A  no cook day at least once a week is a must for me.

Friday

Baked sweet potatoes with Slimming World crustless quiche and whatever vegetables or salad need eating up. There are a multitude of crustless quiche recipes on the internet. I will go for something like bacon and tomato.

For snacks and desserts we generally go for fat free yogurt, fruit, crackers and low fat cheese, Pom bears or cereal bars. I do allow myself the odd biscuit, but if I open a packet, it’s hard to stick to one!

We are sliding into evening snacking again. I am the absolute worst for this so need to make sure we have lots of healthier alternatives in.

Keeping on track as a Slimming World target member is about organisation, as well as determination. There will be enough temptation at Christmas – I don’t want to pile on the pounds before we even get there.

Do you have some good tips for staying at your target weight? I would love to hear them in the comments below, so please share.

As usual, I am linking up with Katy Kicker for her meal planning linky. For more of my frugal food ideas see here.

I use asafoetida powder all the time as I can’t tolerate alliums either. It doesn’t really taste of onions or garlic but it does give a depth of flavour that’s missing otherwise. Just don’t get it on your hands! It stinks to high heaven and doesn’t wash off easily.
