
I love home made lemonade – it is so zesty, refreshing and delicious. However, it is also usually packed full of sugar. Not good when you are aiming to lose weight! I thought I would have a mess around in the kitchen and came up with this – my own Slimming World friendly lemonade recipe.
There are lots of sweeteners you can use instead of sugar, of course. I wanted to use pure stevia as it seems to be a more natural product. However, I couldn’t find any on my sprint around the supermarket, so I picked up Truvia instead. It is a blend of stevia with natural flavourings and something called erithritol. There is more information about this here. It is a natural substance as well, but can cause digestive issues in some people.
Like many sweeteners it does leave a slight after taste, but it’s fairly minimal due to the acidity of the lemons I think. Anyway, we enjoyed this Slimming World friendly lemonade and I hope you do too.
According to the Slimming World app, Truvia is 0.5 Syns per level tablespoon full. I used 50g of Truvia, which according to this calculator, is about 4 tbsp. So we are only looking at a negligible 2 Syns for the whole jug of lemonade.
Serve this lemonade with lots of ice and top it up with about half as much again of soda water for a super refreshing, low Syn summer drink.
Slimming World Friendly Home Made Lemonade
Ingredients
Makes about a pint of lemonade
6 medium lemons, washed
50g Truvia
About 400 ml water
Soda water and ice to serve
Method

Firstly, finely grate the zest from your lemons and place in a medium saucepan. Add the water and Truvia and mix well to dissolve. Heat to boiling point, then turn off the heat and leave to cool a bit.
Meanwhile, cut your lemons in half and squeeze the juice into a jug. Mine yielded about 150 ml of juice, but it will depend on the size of the lemons you use.

When the sugar and water mix has cooled a little, add your juice and mix well. Place a lid on and leave it all to blend and cool for about two hours. Strain into a jug and chill in the fridge until you want to drink it.
Pile some ice in a tall glass and half fill with your lemonade, then top up with soda water. It is actually really good by itself too though!
