Whoops! I’m a bit late with this week’s meal plan. The lovely spring weather is giving me lots of energy, and I have been running about spring cleaning, decluttering, doing DIY, tidying the garden and repotting the houseplants.

It’s great to start ticking off all the jobs on my to do list, but I find when I am busy a meal plan is even more important than usual. Otherwise we end up eating something on toast for dinner, convenience food or grabbing a takeaway. None of these is healthy or frugal!

As I am intending to stick to our food budget, I need a simple meal plan for a busy week.

So without further ado, this is what we will be cooking this week.

Saturday

I got organised before I began to sort the houseplants and put a sausage casserole in the slow cooker.

This is all well and good, but doesn’t work well if you fail to switch the slow cooker in at the plug…. fortunately, I spotted my mistake when I came to prep the veg, so it had to go into the oven.

I used this recipe, which was absolutely delicious, with mash and peas. Incidentally, I didn’t have any apples or fresh sage and it was still yummy.

Sunday

Because I want to save time this week, I made enough sausage casserole for two dinners, so we will eat this again. We have a little broccoli ready in the veg patch so will eat that today.

Monday

Pasta with a quick tomato sauce, made with tinned tomatoes, bacon, peppers and sweet corn. This takes about 10 minutes to make.

We will have a simple salad of rocket and grated carrot alongside.

Tuesday

Whilst researching recipes for my plan for a busy week, I came across this one for tuna melt potato wedges.

This looks simple, thrifty and filling, although I won’t use frozen wedges. 

We will have this with some of yesterday’s simple salad and some grilled tomatoes.

Wednesday

As we have half a jar of tikka paste left over from last week’s chicken curry, I will make it again.

Mr S would have preferred it a bit spicier, so I will add some chilli this time. It was very quick and straightforward to make.

Brown rice and spinach with this one.

Thursday

Easy cheese omelettes with air fried chips and grilled tomatoes.

Friday

Another quick, healthy and cheap favourite here is sardine spaghetti, another quick and easy meal using store cupboard ingredients.

Hopefully there will be some broccoli to go with this, but if not, frozen green beans will do the job.

    I’m glad you managed to save the food and get it in the oven instead! I’ve done this one time before, and it was SO sad having to bin all the food as it’d been sat there for hours! What a disappointment!

    The spring weather is lovely. It gave me so much motivation last week. Shame it was a bit chillier today.
    It sounds like you have a very busy week planned. Good luck with getting all of your jobs done.
    I love the sound of the tuna melt potato wedges. I think my family would love that x
