I love meal planning. It saves time for a start. If you buy all the food you and your family are going to need in one go you will cut out all of the extra trips to the shops. Getting organised also saves brainpower as you approach dinner time and can’t think what to cook.
You can plan economical meals and make sure you use up what you already have, saving both money and food waste.
This week, as my daughter has decluttered and tidied up all of the kitchen cupboards (see my round up from yesterday), it was easy to see what we have and what needs using first.
In fact, this meal plan is all her work too! Lovely to have her home. 🙂
Salmon, potatoes, broccoli and hollandaise sauce tonight, using some of the bargain reduced salmon I picked up last week in Lidl. We try to eat oily fish at least once a week. I love it!
My daughter Izzy isn’t keen on salmon, though, so she will have a veggie burger from the freezer.
At the special request of Izzy, we will have a cottage pie today, with kale from the garden and carrots. As she is responsible for getting organised this week, I can’t really refuse!
African peanut stew, a Simply Cook recipe kit. We haven’t tried this before, but it looks really interesting. It’s made with chicken and okra with crushed peanuts.

I really enjoy nuts in savoury dishes – well any dishes actually. I am obsessed with them! Healthier than crisps too.
An easy dinner tonight, more of the Lidl ham and cheese chicken kievs with a big green salad and maybe a carrot salad too.
Another Simply Cook recipe dish tonight, a jambalaya with chicken and prawns and maybe some green beans.
Freezer lucky dip. Only me for tea I think, so I will use up some of the veggie sausages that have been in the freezer for a while with frozen corn on the cob.
Cheesy tuna rice bake with salad. We had this last week and it was delicious! I really recommend giving it a try. It’s a really cheap and filling meal that the whole family will enjoy.
We made enough to have it for lunch the next day too. This is going to be a new favourite here.
I shall miss my daughter when she has to go back to work after lock down, although I think she will definitely have had enough of Archie by then. He loves her and won’t leave her alone, and insists on waking her up each morning by leaping on top of her and licking her face.
He’s very lovable, but also a total menace!
