
Another week, another meal plan! This week I have to incorporate my daughters into the mix, as we are having a get together for number two daughter’s birthday and will be sharing a few meals. This week’s frugal meal plan is using the ingredients I bought from Lidl. You will be able to see this with a small Home Bargains haul on my YouTube channel from Tuesday if you want to see what I bought and how much I spent.

Anyway, onto this week’s frugal meal plan.
This week’s frugal meal plan
Saturday

Something simple and light to go with the arrival – FINALLY – of some summery weather. Hurrah! It has been cold and wet for far too long. We will have a large salad consisting of a pack of reduced salad leaves that were 20p, some chopped Romaine lettuce, grated carrot, tinned sweetcorn and olives. With this we will have hard boiled eggs, tuna and mayonnaise and some boiled potatoes with butter.
Such a simple meal, but I love this kind of food.
Sunday
Today we are having Roast pork with all the trimmings – stuffing, Yorkshire puds, cabbage, carrots, roast potatoes and gravy.
For pudding, I bought a very inexpensive Jane Asher cake mix for £1.49 from Home Bargains which I was planning to use. However, my eldest daughter is planning to bake a birthday cake now so I will save this for another time.
It is a bit lazy using a cake mix, but handy when you are short on time. I have never tried this particular one, but I am sure it will be fine.
Monday

It’s a bank holiday in the UK. As Mr S and I are planning to go on a sale trail around a village nearby, I doubt I will have the energy to cook anything complicated when I get back. Fortunately I have some Simply Cook mixes that I got for free through the friend referral scheme, so I will use one of those.
The Goan fish curry always goes down well, so we will have that with some rice.
Tuesday

I will use some of the tuna from my last Lidl shop to make tuna penne with black olives. This is fairly quick to prepare, as well as being healthy and tasty. I will use the rest of the salad leaves to make a simple green salad to accompany this.
Wednesday
Cheese and mushroom omelettes tonight with jacket sweet potatoes and peas. I bought four large sweet potatoes in Lidl as they were in the pick of the week for 75p, which I thought was quite a good price.
Thursday and Friday

I shall use up the rest of the green cabbage and some of the bacon I bought tonight in a minestrone soup, using this recipe. As I often do at the end of the week, I will make enough for two nights and have the rest tomorrow, for an easy end of week dinner.
Lots of grated cheese on top should fill us up, but if we are really hungry we will have some rolls from the freezer with butter as well.
The frugal meal plan for breakfasts/lunches
So that is our frugal meal plan for the week. Lunches will be leftovers, sardines or eggs on toast, cheese and bacon toasties or maybe sandwiches. Breakfasts are usually porridge or Greek yogurt with berries from the freezer, although we will sometimes have toast with Marmite or marmalade.
I like to keep it simple and healthy, without blowing the budget completely. So this is a week of cheap meals, apart from the roast. Still, you have to push the boat out on special occasions!
