
It has been a few weeks since I published my meal plan. It all got a bit fluid for a while, which is never a good thing for my budget. When I am organised with a good plan for the week, our grocery bill goes down! There are so many benefits to meal planning, which I often harp on about, so I need to take my own advice and get back to it.
Katy Kicker organises the link party that I generally join in with (sharing each other’s meal plans each week). Because she took a bit of time out because she had a baby girl, Aurora – CONGRATULATIONS KATY!! – that also made me lazy. But no more!
As I said in yesterday’s post, I had a good sort out of our freezers, getting them organised and reminding myself of what was in there. I took the opportunity to plan our meals for the coming week, so we are mainly eating from the freezer. Here is the plan.
This week’s meal plan: eating from the freezer
Saturday

Pork chops with apples, mustard mash and carrots. I bought a huge pack of chops last week and divided them up for the freezer. It’s cheaper that way.
Sunday
Chicken casserole (made with a jar I found at the back of the cupboard), roast potatoes, carrots and broccoli.
Monday

A few weeks ago when there wasn’t much food in the house, I threw together a sort of cheesy spinach thing, which turned out to be delicious. I shall try to repeat this experiment. It used tinned spuds, leftover spinach, sweet corn, cheese and some seasoning.
A very easy and cheap dinner!
Tuesday
Fish pie with mixed frozen vegetables. These have been hanging around for a while so need using up.
Wednesday
Pasta, bacon and vegetable bake. A hearty and quick dinner.
Thursday
I will make enough of the pasta bake to make sure there are leftovers for tonight. It’s just me for dinner, so this will be quick and easy.
Friday
We have a large pack of salmon in the freezer, so we will have some of that, cooked very simply in a little butter, with baked potatoes and frozen vegetables.
After eating from the freezer for a week, hopefully I will be able to empty one completely and then defrost them one at a time. They both need doing. I also want to make some of my redcurrant jelly, as we still have about 6lb of fruit from the garden. This year’s will arrive and we will still be eating the last harvest!

Those pork chops look so good and I love the sound of the cheesy spinach thing. Those thrown together meals are sometimes some of the best. x

We have two freezers and it has been my intention for a while to do some batch cooking to stock up, but as fast as I try to empty it, my husband fills it. I sometimes think I should by a third freezer but no doubt he would fill that up as well, haha. I love fish pie and always use a frozen fish pie mix.
