Easy meal plan for a busy week

I am still loving how tidy and organised our food cupboards are, and I am determined to keep them this way. It is so much easier to plan food for the week when you can see exactly what you have. This week I am going for an easy meal plan. I am trying to get really sorted and organised for Christmas and generally in life!

We haven’t attempted to put up the Christmas decorations yet. Between Archie and the cats, I suspect they might wreck them fairly quickly! We are going to try putting the tree up on its own for a few days first, so that hopefully the novelty will wear off before the decorations go on!

Anyway, I am anticipating a busy week coming up so the easy meal plan is the way to go. Here’s what we will be eating.

Easy meal plan 5th December 2020

Saturday

Spanish chicken with rice and buttered cabbage. I am cheating and using a jar of Lidl’s Spanish chicken sauce – it’s really nice!

Sunday

Breaded haddock with home made air fried chips, grilled tomatoes and peas. OK, this isn’t exactly a Sunday roast, but we are talking about an easy meal plan with minimal cooking time or effort.

Monday

I thought I would try some pasta made with lentils, so picked a couple of packs up from Tesco. It’s really nice, as well as being gluten free. My daughter says the chick pea pasta is also nice, and good for her and her vegan boyfriend.

I will make a simple home made sauce with this, consisting of tinned tomatoes, garlic, herbs, mushrooms, peppers and bacon. Some cheddar on the top will go nicely.

Tuesday

A Simply Cook mix from my collection today, Masala lamb chops. However, I will be using pork chops as they are cheaper. I love lamb, but it’s so expensive I rarely buy it.

I will do sauté potatoes and broccoli with these.

Wednesday

Mr S’s favourite spaghetti bolognese tonight with a winter carrot salad. I just whizz the latter up in the food processor, so it takes no time to prepare. 

I will make the bolognese sauce from scratch, but that’s not too time consuming or complicated.

Thursday

As it’s just me in for dinner tonight, I will make sure there is enough of the spaghetti bolognese for leftovers.

Friday

Spanish tortillas and salad. I picked up some eggs for free via the Olio app, so they will need eating, along with the last of a huge bag of peppers I bought from Lidl.

I actually never get bored of eating eggs in any form, which is great as they often pop up on Olio.

I used to feel like a failure if I didn’t cook everything from scratch. Now I know I can make nutritious and frugal meals without slaving for hours in the kitchen.

I enjoy cooking, but there are only so many hours in the day! Is anyone else going for an easy meal plan this week? What will you be eating?

    Ooh! Chickpea and lentil pastas! I must look out for them.
    Aldi’s Thai Sweet Chili Lentil curls are my favourite crisps now!
