If you have stale bread to use up, here is my favourite bread pudding recipe, from my trusty and ancient Cranks Recipe Book. They don’t sell this fab book any more but Amazon has the one below, which according to the reviews has an excellent selection of classics from the original. Bread pudding is such a simple yet delicious comfort food. It's lovely on its own with a cup of tea or warm with custard. It is super frugal too, preventing stale bread from going in the bin. This version, being vegetarian, uses grated butter instead of the more traditional suet. I prefer it, and use salted as I like the slightly salty sweet flavour it gives. However, you could use unsalted if you prefer. Break up the bread and place in a mixing bowl with your half pint of milk. Leave to soak. Add the dried fruit, butter, sugar and mixed spice. Beat well. Whisk together the egg and 4 tbsp milk and add to the bread mixture. Turn into a greased shallow ovenproof dish, level the surface and sprinkle with ground nutmeg. I used to borrow the Cranks book from the library and copied out some recipes. The bread pudding is very similar to Delia’s which I always used to make. My friend still has the Cranks book so may borrow from her.
