A budget meal plan to kick off lock down

As we go back into lock down, I am even more keen to keep our costs low with a budget meal plan. As I said in my five frugal things post yesterday, I had a good start to my week with some brilliant food reductions from Lidl. I have tucked these away in the freezer as they were all on short use by dates.

My daughter has come home for lock down, so I have one extra to feed for the month. Fortunately, she loves cooking, so will be doing quite a bit for me!

Anyway, here is this week’s budget meal plan.

Saturday

I got a family pack of stewing beef in Lidl, which will be good in the slow cooker. My daughter has volunteered to make this, so I will leave her to decide on whether to follow a recipe or chuck it all in, as I tend to.

I also got a huge bag of potatoes in Home Bargains for just £1.99, so we can have some creamy mash and green vegetables with this. Although I am still limiting my carbs, especially gluten, I am eating potatoes and rice sometimes.

Sunday

I have a freezer full of pork because I bought a family pack and divided them in the freezer. It is much cheaper to buy large packs of things, I find. I will make something like these cheesy pork chops with kale and peas.

Monday

Lazy tea tonight as Monday tends to be a busy day for me. We will have cheesy chicken kievs and salad. The others can have a few chips with theirs if they like.

Tuesday

A cheap and filling dinner today, using tuna and rice. I will make something like this tuna rice bake with a crunchy bacon topping. We will have this with the mange tout that were on the veggie specials in Lidl.

Wednesday

Mr S’s favourite tonight – spaghetti bolognese. I will just have the bolognese sauce with some keto garlic bread, which I love, and a green vegetable or salad.

Thursday

I find they make a nice change when you want something easy yet really tasty.

Friday

As it’s the end of the week, we will either eat leftovers or have an omelette. I like something easy on a Friday, but also to use up any odds and ends in the fridge.

    It sounds like you’re still going to be enjoying some delicious meals despite being on a budget.

    I’m having a week in a couple of weeks where I aim to use up some items that have been languishing in the pantry for a few months now!
