This week’s meal plan is really late! The reason it is late is that we had three days away doing all kinds of amazing and interesting things and only got back late yesterday afternoon. Three days of eating three course meals and cream teas are likely to mean I have put on a few pounds. So back to Slimming World in this week’s plan.
I will do a separate blog post (or even two) on where we have been and what we have been up to. It was a very busy few days but we had a brilliant time.
I am also on a quest to use up some stuff from the freezer as it desperately needs defrosting. However, it is jam packed! A lot of it isn’t Slimming World friendly either.
Back to Slimming World meal plan
Sunday
Prawn and vegetable stir fry and rice. The prawns, french beans and broccoli that will go in this are all from the freezer, along with loads of vegetables that need to be eaten from the fridge. I am not buying more of anything until I have used it all up as I hate food waste.
Monday
Spinach frittata as there is a big bag of spinach from last week’s shop that needs to be eaten. I will put chopped red pepper and some low fat cheddar allowance in this. We have salad leaves ready in the greenhouse and fresh parsley so I will make up a home grown green salad to go with this.
Tuesday
Salmon from the freezer with new potatoes, carrots and peas. This will all be free on my back to Slimming World meal plan, although I might make a parsley sauce to go with it using my dairy allowance.
Wednesday
I am still working my way through the Simply Cook boxes that I got. One came as a £1 introductory offer and then I forgot to cancel my subscription and got two more! They are actually pretty good and make very tasty dinners, but it’s much cheaper to cook for yourself. Good if you are in a hurry though! I will make nyonya, which is a curry with new potatoes and green beans. I will use peas to help clear the freezer. It contains coconut milk, which is quite high fat, but I am substituting this with a reduced fat version.
Thursday
Tuna penne with black olives and grated carrot salad. We have chives in the garden to use in this.
Friday
Chick pea curry from the freezer with rice. I need something quick and easy as it is my official leaving party from work. It was over a month ago that I actually left, but as several of us were going we decided to have one big do. It will be lovely to see everyone.
Saturday
Another Simply Cook recipe tonight, jambalaya! It should have chicken and chorizo in it, but I am going to leave the chorizo out as it is too fatty. We will have more of our home grown salad leaves and chopped tomatoes with this dish. Honestly, I am not sure how many Syns this will contain, but I will use Frylight instead of the oil they suggest and hope their spice boxes don’t contain too much oil.
We have loads of peas in the freezer for some reason, so I will make some of my mum’s easy pea soup as well.
I am happy to get back to Slimming World. The plan is very good and you can eat a lot as long as you stick to the rules. I have lost half a stone very easily. Because of this trip and our holiday to France my weight loss has stalled so I need to make lots of effort to lose the second half a stone and get to my target. Meal planning is super important in this respect, as well as saving money, of course.

Your meals sound lovely but wouldn’t work for me. I follow a fairly low carb eating plan, avoiding as much processed food and as much added sugar as I can. This is recommended by my cardiologist and is part of Dr. Jason Fung’s program. Dr. Fung is a Kidney Specialist here in Canada and he had become shocked at the number of patients he was treating due to Diabetes. He started researching what and how people were eating and has come up with some shocking results – basically we’ve been sold a bill of goods with all the low fat products and edicts over the past 35 years or so.
He has a whole series of videos on YouTube if anyone wants to check it out and his very popular book is called “The Obesity Code”. A couple of friends were put on this program by their doctors and the weight loss is impressive, but even better, they’ve been able to eliminate a lot of their meds.
Basically, it’s what your grandmother did when she wanted to lose a few pounds, cut out the starch – potatoes, bread and desserts – and for us – processed foods. Otherwise, lots of veg, some fruit, proteins and fat i.e. butter, olive oil and high fat dairy. (no vegetable oils or margarine) – I try to do some fasting (an age old practice that we have forgotten about) so most days I eat two good meals (no snacking).
My only issue with it is the fact that it is a bit pricy – fresh veg are very expensive here right now since we are just at the start of our growing season and meat & fish is also very costly – I look for sales and ways to make it stretch without pasta or rice (i.e.. 1/3 of a steak sliced over my large salad), lots of eggs and watching my portions. I’m not hungry, I feel good and I’m losing weight again so I’m trying to make this a lifestyle plan rather than a temporary diet. But if it’s a special occasion he says to go ahead and enjoy yourself – treats have always been a part of life – it’s just that we tend to do that celebrating almost every day now with our fancy coffees, doughnuts, muffins etc. that we eat without even thinking about it.
I remember reading an answer to that age old question “Why don’t French Women get fat? – well, the number one answer tends to be, no snacking)!

That sounds very interesting. I also read that saturated fat isn’t the issue – sugar is. Slimming world tends to go for wholemeal carbs and fat less sugar . Do the vegetables have to be fresh – couldn’t you eat some frozen?

I do eat a lot of frozen veg but by this time of year I love a big salad almost daily and you’d probably faint if I explained how much some of our fruit & veg can cost. But – it’s funny, I wouldn’t think much of spending the same amount on a packet of biscuits – it’s just that we somehow expect these sorts of things to be cheaper.

Well, what an awesome spread you have planned for this week!
I also agree you dont have to rely on these delivery boxes as they cost so much and your’re not really sure of fat content etc.
I reckon we need some good education for people about nutrition to help with food choices. Saying that though, food is nice and even us who know better, tend to go with what is not good for us sometimes.
