Back to meal planning this week. I had a week off last week as I was totally uninspired! I am finding this more and  more during lockdown. Thinking about why this might be the case, I am not entirely sure.

It is partly because I am out of any kind of shopping routine, I think. Usually I go once a week to Aldi or Lidl. I know what they sell and what is likely to be available, so meal planning is easy around that. 

At home, we also have no set routine at the moment either. Mr S comes and goes but still plans his days around taking his  mum to and from the dialysis unit three times a week. Sometimes the times change with little notice and I don’t always know who I am cooking for. On top of that, his mum likes quite plain food, which I am trying to marry with my low carb regime too.

However, when I went to Morrison’s last week I picked up a lot of reduced meat. Because of this, I can – and should – do a meal plan! No excuse not to really.

The amount of carbs I eat has definitely crept up alongside the lack of some sort of plan. I need to get back on this eating regime, as I feel so much better when I do. My energy levels have dipped and I feel quite achy at times. A low carb diet is very beneficial for fibromyalgia, but it does require a bit of organisation.

Finally, one of my June goals is to reduce the grocery bill. When I get back to meal planning, I definitely save money! So, onwards and upwards.

Saturday

I will use the braising steak that I got yellow stickered along with the reduced pack of stewing veg for dinner tonight. This will go into the slow cooker with some stock and tinned tomatoes.

I will make mash for the troops but stick to some kale myself with this.

Sunday

I have a new box from Simply Cook, to give myself a bit of inspiration. My biggest bargain in Morrison’s was three huge packs of large chicken breasts. They were reduced so much – from £9.25 to £2.78 per pack. I will use a couple of these to make the Simply Cook chicken saag curry. I have home grown chard in the freezer to use instead of spinach.

Monday

We have some lettuces ready to eat on the veggie patch, so tonight I will have a salad of lettuce, tomato, grated carrot and olives with hard boiled eggs and tuna mayonnaise. A nice, easy Monday evening dinner.

Tuesday

I made these mustard and mozzarella stuffed chicken breasts last week, and they were absolutely delicious. Now that I have so much chicken, of course I need to do them again. We will have kale and broccoli with them.

I forgot to take a photo of them once they were cooked, but here is one of them ready to go in the oven.

Wednesday

Roasts no longer have to be on a Sunday! Every day feels like the weekend at the  moment….

I bought a reduced price chicken as part of my haul, so we are going to have a mid week roast. I will make this for my daughter too, as she loves a roast dinner. I picked up some Yorkshires in the supermarket with this in mind.

Thursday

Hopefully there will be some chicken left over from last night. I will mix it with some bacon, cheese and mushrooms and do stuffed vegetables – either peppers or courgettes, depending on what I can get hold of. It will entail a trip to find some courgettes, though, as they didn’t have them in Morrison’s.

Mr S and his mum can have saute potatoes with theirs. I will just have some salad leaves I think.

Friday

I have some halloumi in the fridge, so will make a salad with it using the flavouring from my Simply Cook box. I won’t follow it completely as it requires couscous, which I am not eating.

This is the second time I have made this one and it was really yummy. I love halloumi anyway, but this added so much flavour.

I will let you know how it goes getting back to meal planning. Hopefully I will feel a little more inspired this week! What are you eating?
