The best laid plans don’t always work out, and last week’s meal plan is a good example. I mentioned in yesterday’s post that I had a bit of a fibro flare up, so didn’t do much cooking. One night we even had a takeaway, which is almost unheard of!
However, no such extravagance this week. I am keeping the meal plan very simple and straightforward. Although I am feeling better, I want to make things easy for myself without busting the budget with a take out or eating rubbish.
Although I am still keeping my carb intake quite low, I am adding a few here and there. A low carb diet really does help you lose weight, and I don’t want to shed any more.
Mr S says I am getting too skinny! I got weighed at the doctors this week and another half stone had just fallen off, so I think he is right. However, I am not going to start eating lots of sugar and gluten, as they definitely make me feel rubbish.
So here is what we are eating this week.
Slow cooker beef casserole. We enjoyed this last week so I thought I would do it again.
It’s a chuck it all in sort of a meal and I don’t use a recipe. Just beef, tinned tomatoes, stock and lots of vegetables.
I will throw a tin of spuds in near the end so that I don’t even have to peel any. We still have quite a few tins in our stores.

Tuna rice pepper thing…. this is something I have thrown together since my student days. It uses brown rice, tomatoes, peppers, garlic, maybe a splash of wine, various herbs and a can of tuna.
It’s not glamorous, but is quick, cheap and comforting. I like grated cheese on the top and a green salad on the side.
I picked up a large pack of pork fillets when I was in Lidl, so we will have a couple of these fried up with some apples. We still have some in the fridge from a friend’s garden. Since I rarely make desserts at the moment, they aren’t getting used up as quickly as usual.
We will have carrots and kale with these.
Another Simply Cook mix tonight. My daughter raved about their mushroom stroganoff so I will give it a go, with some brown rice.
Cheese and bacon omelettes and salad tonight. Easy tea.
Slow cooker sausage casserole. I found a casserole mix at the back of the herb cupboard. This must have been there ages, as I don’t usually buy things like this! I may as well use it up. Mr S can have mash with his, but I will probably just have some veg.
So, that’s what we are eating this week. Keeping it straightforward and hopefully saving some time and energy in the process. What are your food plans?
